Key Lime Pie for Breakfast
There are so many ways you can make oatmeal! All of them are fast and easy for breakfast. I wish I could devote all of letter O week to my favorite, Oatmeal, but I’ve got other posts I wanted to write. So, instead, I’ll share this fave:
- 1 cup quick oats
- 1 cup low-fat milk (or coconut milk)
- 1 tsp. vanilla
- 2 tsp. lime juice
- 1-2 tsp. honey (or other sweetener)
Combine all ingredients and cook in large microwave dish for 1 minute. Stir, and cook 1 minute more. For the topping, add:
- Crushed graham crackers
- Lime zest
- coconut
- Nuts (optional)
