Beginning Herb Garden, Kids Only
Spring starts this week, and so begins our attempt at gardening. This year I decided to let the kids have complete ownership over one herb plant (in honor of the letter H). They are responsible to:
- Choose the herb
- Plant it
- Water it
- Teach us how to use it
- Make a meal with it!
Nate chose Basil, Erica chose Oregano, and TJ chose Cilantro. After they planted, they got on the computer and opened some of my health books to do a little research so they know how to care for their plant, and how to cook with their plants.
We had so much fun learning about the herbs they chose. Here is what we found out.
- Basil
- Used to make pesto
- Can use in soups and salads
- Has been shown to restrict bacteria growth, including some bacteria that are resistant to antibiotics! Amazing!
- Oregano
- High in Vitamin K
- Also has the anti-bacterial properties!
- “on a per gram fresh weight basis, oregano has demonstrated 42 times more antioxidant activity than apples, 30 times more than potatoes, 12 times more than oranges and 4 times more than blueberries.” WH FOODS
- Can use Oregano in pizza sauce, bread, and salad dressings.
- Cilantro
- Another anti-biotic! Wow! According to WH Foods again, the compound dodecenal was twice as effective as antibiotics in killing salmonella.
- Helps stimulate insulin secretion and lower blood sugar.
- Can be used in dressings, salsa, guacamole, or many Mexican foods.
